WINE OF ORIGIN: WALKER BAY
Winemaker’s Notes:
This rosé champions two cultivars that are signature grapes for this cool terroir, showing all the vivid aromatics that celebrate this style. Reaping the benefits of slow ripening, the wine accentuates the attention given to vineyards farmed exclusively for rosé. The 70% Syrah component is managed differently to Syrah farmed for the estate’s red wine. The bunches are shaded by the canopy and the vineyard receives more water to nurture freshness in the final wine. Sauvignon blanc fruit adds that extra punch of natural acidity to elevate the wine.
All grapes are handpicked and whole bunch pressed to keep colour and tannin extraction to a minimum. Syrah grapes for rosé production are picked earlier and then blended with a 30% Sauvignon blanc component which ripens at the same time. Pressed together the blended juice undergoes a co-fermentation to prompt the desired layers of aroma. Spending a mere breath on the skins, only a delicate shade of crimson pink is encouraged to develop. Ensuring further quality, only free-run juice was cold fermented with selected yeast strains.
