Winemaker’s Notes:
As a rule, Viognier will ripen before Shiraz and when the time comes to harvest Shiraz, Viognier’s Balling (sugar concentration) will already be very high. Viognier is considered “spice” in a Rhône-style blend and the high ripeness at which it is harvested provides a pleasant dried apricot character to the wine, but like spice in food only a small amount is needed – adding too much can spoil your meal. 3% Viognier added is usually enough.
Grenache adds red berry fruit flavours to the blend and Mourvèdre a pleasant earthiness. Mourvèdre will be the very last component added – tasted and then blended with the Shiraz / Viognier once malolactic-fermentation has been completed. Mourvèdre is famous for its earthy sub tones. Shiraz is a masculine wine, full of smoky, cigar box, leather, sweaty and farmyard flavours. This wine is limited to the ten best barrels in the cellar.
